Cyclo-oxygenase 1 and 2 (COX-1 and COX-2) are enzymes which convert essential fatty acids (especially Omega-6) to prostaglandins. Although the body requires prostaglandins, these intracellular messengers are found at excessively high levels at sites of inflammation.
