The human blood stream has a pH (acid-alkaline balance) of 7.35-7.45, just slightly alkaline.  (Short chemistry lesson: 7.0 is neutral, below 7 is acidic and higher than 7 is alkaline). Blood stream pH is "Mission Critical" to life, so the body will do everything possible to maintain this balance within a very narrow range.

Regardless of what is eaten, all cellular processes --- and therefor cellular waste products --- are acidic.  The kidneys are designed to eliminate excess acid, and the urine pH is normally slightly acidic, reflecting this acid elimination.

Some foods create more acid than others. This, plus stress, drugs and disease, can contribute more acid to the system. Because the bloodstream MUST remain alkaline, the body will do everything possible to neutralize this excess acid. One of the primary "buffer systems" of the body is to pull calcium and magnesium out of bone to neutralize excess acid. This can lead to osteoporosis, stone formation and more. The body also uses potassium to neutralize acid.

Overall, it is believed by some (myself included) that this "Mild Metabolic Acidosis" (MMA) contributes to disease, aging and a host of diseases. Since the kidney releases excess acid via the urine, measuring urine pH (acid) is one way to evaluate for excess acidity.
